Preservative sodium benzoate raises safety concerns

Last week, researchers at the university of Chicago discovered a new epigenetic pathway in human cells called Lysinebenzoylation.What's more, sodium benzoate can be involved in this pathway, thus influencing gene expression.Sodium benzoate is a fairly common preservative in our daily lives and is found in many beverages, sauces, and preserves.Currently, the maximum amount of sodium benzoate allowed in food stipulated by FDA is 0.1%, while in this experiment, less than 0.07% of sodium benzoate can significantly affect gene expression.Although the results were found in vitro cell experiments, they may raise concerns about the safety of preservatives
